Trying to find healthy things to eat while being on a budget can be difficult. Here are a few go-to recipes to make when you are trying to save a buck and still eat healthy.
Vegetable Stir Fry
- 1 Bag of Frozen Vegetables
- 2 cups of whole wheat noodles
- 4 tbps of sir fry sauce
Bring water to a boil on the stove and add the noodles. At the same time add the frozen veggies to the frying pan until they steam fork-tender. Once the noodles are fully cooked drain the water and add the vegetables to the pot. Add the stir fry sauce to the noodles and veggies. Add any additional spices and season to taste.
Veggie Spring Rolls
- Spring Roll Wrap Paper
- Shredded Carrots
- Cucumber slices
- Banana Peppers
- Bell Pepper
- Green Onion
- (+/- any veggies of your choice)
Wet the wrap paper with water front and back and place on a flat surface. Place veggies of your choice on one side of the wrap. Roll the veggies in the wrap from one side to the other. Fold the corners in and roll up to the top.
3 Ingredient Black Bean Burgers
(makes 6-8 burgers)
- 2 Cans of Black Beans
- 1 Cup of Instant Oats
- 5 tbps of mustard
Pre-heat oven to 350 degrees. Combine Black Beans and oats together in a bowl. Add mustard to the bean and oat mixture then mash them together. Mash the ingredients together until it’s malleable. Shape them into burger form and lay then on a greased baking sheet. Bake for 15-20 mins making sure to flip them over half way through. The burgers should be firm and slightly crunchy when done.
